An adaptation of a dish from the Indian subcontinent. Small pieces of chicken are marinated in spices and coconut cream, threaded on bamboo skewers and grilled over glowing coal.
Salty, sweet and tangy with a little heat. That’s how chicken tastes when you combine fish sauce, lime juice, sugar, onion, chilies, ginger and garlic. Add the sweetness of peppers and pineapple, and the smokiness of the grill, and it's just superb.
Chicken thigh fillets are cut into small cubes and marinated in a mixture of fish sauce, sweet soy sauce, oyster sauce, garlic, chili, lemongrass and palm sugar before they are threaded onto bamboo skewers and grilled.
Grilled skewered chicken is ubiquitous in Southeast Asia and marinades differ from region to region. This is Thai-style chicken sate / satay with peanut sauce for dipping.
Cubes of chicken fillet are skewered alternatingly with scallions and grilled while brushing with a sweet-salty sauce throughout the cooking. Yakitori is traditionally a snack or “cocktail food” but we like it with rice.
