My beloved breakfast and afternoon snack as a child, fried potatoes and scrambled eggs seasoned simply with salt was comfort food to the max. In this recipe, I threw in salty Chinese ham and sweet yellow onion for a more complex flavor.
Scrambled eggs, browned ground pork, softened onion, garlic and tomatoes are simmered in bone broth with soy sauce, oyster sauce and hoisin sauce. Inspired by Chinese-style scrambled eggs with tomatoes.
Originally intended to be a fusion of shakshuka and eggs en cocotte, I decided in the end that I wanted meat for breakfast. Served with crusty bread, this baked meat and egg dish makes a hefty breakfast.
